Mutton Rogan Josh (Kashmiri-Style Mutton Curry) 😋

Ingredients:

  • 500g mutton (bone-in for rich flavor)
  • 3 tbsp mustard oil (or any cooking oil)
  • 2 bay leaves
  • 4 green cardamom pods
  • 2 black cardamom pods
  • 4 cloves
  • 1-inch cinnamon stick
  • 1 large onion (finely chopped)
  • 1 tbsp ginger-garlic paste
  • 2 tsp Kashmiri red chili powder (adjust to taste)
  • ½ tsp turmeric powder
  • 1 tsp cumin powder
  • 1 tsp coriander powder
  • 1 tsp fennel powder
  • ½ cup yogurt (whisked)
  • 1 tsp garam masala
  • Salt to taste
  • 1 ½ cups water
  • Fresh coriander (for garnish)

Instructions:

1. Sear the Mutton

  • Heat mustard oil in a heavy-bottomed pan until it starts to smoke slightly.
  • Reduce the heat and add bay leaves, cardamoms, cloves, and cinnamon. Sauté for a few seconds.
  • Add chopped onions and cook until golden brown.
  • Stir in the ginger-garlic paste and sauté until the raw smell disappears.

2. Cook the Masala

  • Add Kashmiri chili powder, turmeric, cumin, coriander, and fennel powder. Stir well.
  • Lower the heat and slowly mix in the whisked yogurt. Cook for 2 minutes.

3. Slow Cook the Mutton

  • Add the mutton pieces and sear them for 5-7 minutes until browned.
  • Pour in water, cover, and let it simmer on low heat for 1.5 to 2 hours, stirring occasionally, until the mutton is tender.
  • Add garam masala and adjust salt to taste.

4. Serve & Enjoy

  • Garnish with fresh coriander and serve hot with naan, roti, or basmati rice.
