Mutton Rogan Josh (Kashmiri-Style Mutton Curry) 😋

Ingredients:
- 500g mutton (bone-in for rich flavor)
- 3 tbsp mustard oil (or any cooking oil)
- 2 bay leaves
- 4 green cardamom pods
- 2 black cardamom pods
- 4 cloves
- 1-inch cinnamon stick
- 1 large onion (finely chopped)
- 1 tbsp ginger-garlic paste
- 2 tsp Kashmiri red chili powder (adjust to taste)
- ½ tsp turmeric powder
- 1 tsp cumin powder
- 1 tsp coriander powder
- 1 tsp fennel powder
- ½ cup yogurt (whisked)
- 1 tsp garam masala
- Salt to taste
- 1 ½ cups water
- Fresh coriander (for garnish)
Instructions:
1. Sear the Mutton
- Heat mustard oil in a heavy-bottomed pan until it starts to smoke slightly.
- Reduce the heat and add bay leaves, cardamoms, cloves, and cinnamon. Sauté for a few seconds.
- Add chopped onions and cook until golden brown.
- Stir in the ginger-garlic paste and sauté until the raw smell disappears.
2. Cook the Masala
- Add Kashmiri chili powder, turmeric, cumin, coriander, and fennel powder. Stir well.
- Lower the heat and slowly mix in the whisked yogurt. Cook for 2 minutes.
3. Slow Cook the Mutton
- Add the mutton pieces and sear them for 5-7 minutes until browned.
- Pour in water, cover, and let it simmer on low heat for 1.5 to 2 hours, stirring occasionally, until the mutton is tender.
- Add garam masala and adjust salt to taste.
4. Serve & Enjoy
- Garnish with fresh coriander and serve hot with naan, roti, or basmati rice.
