Mutton Handi (Rich & Creamy Mutton Curry) 😋

Ingredients:
- 500g mutton (bone-in for extra flavor)
- 3 tbsp ghee (or oil)
- 1 large onion (finely chopped)
- 2 tomatoes (pureed)
- 1 tbsp ginger-garlic paste
- ½ cup yogurt (whisked)
- 1 tsp red chili powder
- ½ tsp turmeric powder
- 1 tsp coriander powder
- 1 tsp cumin powder
- ½ tsp garam masala
- ½ tsp black pepper
- Salt to taste
- ½ cup cream (optional, for richness)
- 1 tsp dried fenugreek leaves (kasuri methi)
- 2 tbsp fresh coriander (chopped, for garnish)
Instructions:
1. Sear the Mutton
- Heat ghee in a handi (or deep pan) over medium heat.
- Add chopped onions and sauté until golden brown.
- Add ginger-garlic paste and cook until fragrant.
- Stir in mutton and sear until browned (about 5-7 minutes).
2. Cook the Masala
- Add tomato puree and cook until the oil starts separating.
- Mix in red chili powder, turmeric, coriander, cumin, black pepper, and salt. Stir well.
3. Slow Cook the Mutton
- Lower the heat and add whisked yogurt. Stir continuously to prevent curdling.
- Cover and cook on low heat for 1.5 to 2 hours, stirring occasionally. Add water if needed.
4. Final Touch
- Once the mutton is tender, stir in cream and dried fenugreek leaves.
- Add garam masala and simmer for 5 more minutes.
5. Serve & Enjoy
- Garnish with fresh coriander and serve hot with naan or steamed rice.😃🔥
